We challenged chefs of three different skill levels - an amateur, a home cook, and a professional - to make a batch of chicken wings. Once each of them had served up their spicy offering, we brought in a food scientist to lay down some knowledge. Whose wings really took off? Find out on this episode of 4 Levels.

  • Christopher Scott of the Former Butterfunk restaurant in Brooklynn is not a normal level 3 chef. He's too good for this show. The man is something of a hero of mine and I am having some kind of weird surreal moment where I kind of love that he's here and hate it at the same time.

  • This is nothing. These guys are doing it all wrong the best way to make wings is to marinate them for a long time. I used to work in a restaurant and I would make wings that would be marinated for no less than 12 hours. I had wings marinating once from Thursday afternoon to Sunday night I made a batch of 30-40 on the barbeque they were gone in 60 seconds. Nice heat and subtle sweetness and beautiful tenderness. And I didn't use a recipe for the marinade I made my own marinade from fresh spices and homemade sauces. Now that is finger lickin good.
